Beverly Style (6 – 8 servings)

For 50 years all of us have tried to get this recipe from the woman who never uses recipes. After years of observation here it is.

  1. 3 lbs. of Eagle Wood Ground Beef
  2. 1 ½ cups of bread crumbs
  3. 1 tablespoon of catsup
  4. 1 teaspoon of mustard
  5. 1/2 teaspoon of onion powder
  6. 1/2 teaspoon of poultry seasoning
  7. 1/2 teaspoon of salt
  8. 1/2 teaspoon of pepper
  9. 1/2 teaspoon of celery salt
  1. Mix all the above with milk until the mixture feels like a hamburg pattie.
  2. Bake loaf in the middle of a glass baking dish 13 X 9 X 2. Add ½ inch of water. If water evaporates before 1 ½ hours add more.
  3. Bake at 350ºF for 1 ½ hours.

Salsa Inglesia Style (4 – 6 servings)
  1. 1 ½ lbs. of Eagle Wood Ground Beef
  2. 1/2 lb of Eagle Wood Ground Pork
  3. 1/4 cup of your favorite chili sauce
  4. 1/2 teaspoon of poultry seasoning
  5. 1/2 teaspoon of salt
  6. 1/2 teaspoon of pepper
  7. 1 tablespoon of Worcestershire (Salsa Inglesia)
  8. 1/4 cup finely chopped celery
  9. 1/4 cup finely chopped onions
  10. 3 cups of bread crumbs
  11. 3/4 cup of milk
  12. 2 eggs

  1. Soak bread in milk, add eggs, onion, celery, Worcestershire sauce, salt, pepper, poultry seasoning, and mix thoroughly.
  2. Add meat, pork and place loaf in glass baking bowl 13 X 9 X 2.
  3. Bake at 350ºF for 1 ½ hours.
  4. Spread chili on top 15 minutes before removing

Bachelor Style (4-6 servings)
  1. 1 ½ lbs. of Eagle Wood Ground Beef
  2. 1/2 lb of Eagle Wood Ground Pork
  3. 2 small packages of dry soup mix
  4. 2 cans of onion soup
  1. Mix meat, dry soup mix and one can of soup thoroughly.
  2. Add loaf mixture in glass baking bowl 13 X 9 X 2.
  3. Pour 1 can of soup around loaf.
  4. Bake at 350ºF for 1 ½ hours.

Razor Back Style (8 – 10 servings)
  1. 2 lbs. of Eagle Wood Ground Beef
  2. 2 lbs. of Eagle Wood Ground Pork
  3. 1 cup whole grain bread crumbs
  4. 1 cup milk
  5. 1 tablespoon salt
  6. 1 small onion
  7. 1/4 tablespoon pepper
  8. 3 eggs slightly beaten
  9. 6 1 inch by 1/2 inch by 6 inch chunks of pork leaf lard

  1. Mix meat, pork and ingredients in glass baking bowl 13 X 9 X 2.
  2. Place mixture on leaf lard strips.
  3. Bake at 400ºF for 1 ½ hours basting every 15 minutes.
  4. Start with 1/2 cup of water, then use juice in bowl.
  5. Serve with diced onion.

Potpourri Style (6 – 8 servings)
  1. 3 lbs. of Eagle Wood Ground Beef
  2. /1/2 lb of Eagle Wood naturally smoked bacon
  3. 1/4 lb of Eagle Wood Leaf Lard
  4. 2 medium onions
  5. 2 large tomatoes
  6. 1 lb of green string beans
  7. 6 stalks of celery with leaves
  8. 1/2 lb of fresh mushrooms
  9. 2 large natural eggs
  10. 4 tablespoons of butter
  11. 2 medium carrots
  12. Fresh parsley 2 tablespoons
  13. 1 tablespoon chives
  14. Thyme leave, pinch
  15. Sea salt, pinch
  16. Pepper, pinch
  17. Dry mustard, ½ teaspoon
  18. 1/3 cup soy sauce naturally fermented
  19. 2 cloves garlic
  20. 1/2 cup of whole wheat flour
  21. 1/2 cup milk

  1. Render down leaf lard in frying pan.
  2. Dice onion and pan fry until clarified then add crushed tomatoes.
  3. Add finely chopped string beans, celery with leaves and mushrooms.
  4. Add 1/8 lb. of butter and continue to sauté.
  5. Grate two carrots and place into pan.
  6. Mince two tablespoons each of parsley and chives with a crushed clove of garlic.
  7. Place all ingredients and beef in a bowl and thoroughly mix by hand.
  8. Add salt and pepper to taste, add ½ cup of soy sauce.
  9. Add ½ teaspoon of dry mustard, ½ cup of milk and two eggs.
  10. Mix all ingredients by hand thoroughly.
  11. Place the loaf in a glass baking dish and add ¼ inch of water,
  12. Bake at 350ºF for 2 ½ hours, basting every 30 minutes.
  13. At timed end, drain off juice into separate gravy bowl.
  14. Place loaf under broiler until crispy.
